Muffin Tin Breakfast
Enjoy a hot breakfast of eggs, ham, cheese and potatoes cooked in a muffin tin. Here’s what’ll you need:
- ½ Dozen Eggs
- Chopped Ham
- Shredded Cheese
- Diced Potatoes
- Salt & Pepper
- 12-Cup Muffin Tin
- Cooking Spray
Spray the muffin tin wells with cooking spray, crack one egg each into 6 of the wells, and whisk with a fork. Sprinkle with chopped ham and shredded cheese. Place the diced potatoes in the other 6 wells and season with salt and pepper. Bake on a cooking grate over the campfire, or on the grill.
Pigs in a Blanket
For a twist on a campfire favorite, swap out the usual buns for these dough-wrapped hot dogs on a stick. Here’s what you’ll need:
- Hot Dogs (or turkey dogs)
- Pillsbury Crescent Rolls
- Clean Wooden Sticks or Skewers
- Aluminum Foil
Push a stick into the end of the hot dog, about ¾ of way and wrap one pre-cut triangle of crescent roll dough around the hot dog. Loosely wrap the dough covered hot dog in aluminum foil and roast it over the fire, slowly turning the stick for 15-20 minutes. Serve with a side of ketchup and mustard.
Campfire Pizza
Everything tastes better toasted over an open fire, and that includes pizza. Here’s what’ll you need:
- Pre-Made Pizza Dough, Flatbread or Naan
- Pizza Sauce
- Shredded Mozzarella Cheese
- Toppings (optional)
- Frying Pan (optional)
Place the pizza dough on a grill rack or a frying pan large enough to fit the pizza base, and allow the crust to heat up for a couple of minutes. Next, add the sauce, followed by any toppings and cheese. Heat until the crust crisps and the cheese melts.
Apple Pie on a Stick
New York is known for its apples, and this recipe turns the healthy fall favorite into an easy campfire dessert. Here’s what you’ll need:
- Apples (any variety)
- Cinnamon
- Sugar
- Clean Wooden Sticks or Skewers
- Small Bowl
Push a stick through the apple and roast it over the fire, turning the stick as you would a marshmallow. When the apple peel loosens, carefully peel it off and discard, but leave the apple on the stick. In a bowl, mix one-part cinnamon with four-parts sugar and roll the apple around in the mixture until it is evenly coated on all sides. Roast over the fire for a few more minutes until the sugar melts into a glaze, and let cool before eating.
Campfire Banana Boats
Say goodbye to the same old campfire s’mores with this fancy version of the classic sweet treat. Here’s what you’ll need:
- Bananas
- Mini Marshmallows
- Chocolate Chips
- Graham Crackers
- Aluminum Foil
Slice the banana lengthwise, keeping the peel and bottom intact. Stuff the slit with mini marshmallows, chocolate chips and crushed graham crackers. Wrap the whole banana in foil and place it over the warm coals for 5-10 minutes until melted and warm. Allow to cool and eat with a spoon.
